Tex-Mex Black Bean Turkey Burgers

Ingredients:

  • 1 lb. Extra Lean Turkey Breast (99%)

  • 1 can no salt added Black Beans

  • 1 red bell pepper

  • 1/2 red onion

  • 1 Tbs minced garlic

  • 1/2 bag spinach

  • 1/2 cup whole wheat bread crumbs

  • 1 egg

  • 1/2 tsp cumin

  • 1 Tbs California Chili Pepper

  • Freshly cracked black pepper

  • Avocado oil or olive oil

Directions:

  1. Chop red bell pepper and red onion into 1 inch pieces that can fit into food processor. Lightly chopping in processor, dice into very small pieces without liquifying.

  2. Once diced in food processor, add red bell pepper and red onion to skillet with minced garlic and a little bit of oil over medium heat. Sautee for 6 minutes.

  3. Finely chop spinach on cutting board. Add to skillet with vegetables and cook for two minutes. Once done, remove skillet from stove and place in refrigerator/freezer for 10 minutes to cool down.

  4. While vegetables cool, add turkey, black beans and egg to a mixing bowl. Knead ingredients together until fully mixed.

  5. Add California Chili Pepper, cumin, fresh cracked pepper and bread crumbs to bowl. Mix together.

  6. Once vegetables have cooled, add them to turkey mixture and mix thoroughly.

  7. Form turkey mixture into patties. The recipe should create about 6-8.

  8. Heat pan over medium/high heat and spray with oil. Add patties to pan and cook for 5 minutes, then flip and cook for 5 minutes on other side or until patties are firm

Toppings I used:

  • Homemade fry sauce: Sprouts 50% less sugar and sodium ketchup, avocado mayo, black pepper and garlic powder.

  • Avocado

  • Broccoli Sprouts

  • Tomato
