This is a blood-sugar-friendly dinner you’ll actually look forward to — flavorful, filling, and ready in under 30 minutes.

Ingredients:

  • 2 organic chicken breasts

  • 1 16oz jar salsa verde

  • 1 can no salt black beans

  • Taco seasoning (I love @thespicehunter or @sietefoods)

  • 1 bell pepper

  • 1/2 red onion

  • cilantro

  • 1 tsp minced garlic

  • Salt + Pepper

  • Avocado oil

Directions:

  1. Slice chicken in half (long ways, to make two thin flat slices) and lightly season with salt and pepper.

  2. Add a little avo oil to frying pan and cook chicken on each side 2-3 mins each until almost done.

  3. Take chicken off and place on cutting board. Using two forks, shred it to desired bite size.

  4. Add a little more avocado oil to pan and sautee chopped red bell pepper and chopped red onion for about 5 minutes. Add in garlic around the last minute and cook until fragrant.

  5. Add in shredded chicken and drained/rinsed black beans. Cover generously with taco seasoning, salt and pepper.

  6. Add in salsa verde and a handful of chopped fresh cilantro.

  7. Reduce heat to low and allow flavors to marinade for 5-10 mins.

  8. Add to corn tortilla with avocado and extra cilantro, or in a salad!
