On Repeat: Lemon Dijon Salmon
Ingredients:
1 lb salmon
1 Tbs Avocado Mayo (I used Chosen Foods, but Primal Kitchen has a great one too)
1 Tbs Organic Stone-ground mustard (Dijon is fine too)
1 tsp Dill Weed
1/2 lemon
1 Tbs minced garlic
Directions:
Preheat oven to 400 degrees.
Rinse and skin salmon, pat dry. Place on a baking sheet covered in foil and sprayed with oil.
Mix avocado mayo, stone-ground mustard, garlic, dill weed and juice of lemon to bowl. Mix together ingredients.
Coat salmon evenly in marinade mixture. Place in oven at 400 degrees for 15 minutes.
Broil 1-2 minutes, watching closely.
Serve with any side or over salad.
