On Repeat: Lemon Dijon Salmon

Ingredients:

  • 1 lb salmon

  • 1 Tbs Avocado Mayo (I used Chosen Foods, but Primal Kitchen has a great one too)

  • 1 Tbs Organic Stone-ground mustard (Dijon is fine too)

  • 1 tsp Dill Weed

  • 1/2 lemon

  • 1 Tbs minced garlic

Directions:

  1. Preheat oven to 400 degrees.

  2. Rinse and skin salmon, pat dry. Place on a baking sheet covered in foil and sprayed with oil.

  3. Mix avocado mayo, stone-ground mustard, garlic, dill weed and juice of lemon to bowl. Mix together ingredients.

  4. Coat salmon evenly in marinade mixture. Place in oven at 400 degrees for 15 minutes.

  5. Broil 1-2 minutes, watching closely.

  6. Serve with any side or over salad.
