Healthy Childhood Fav: Almond Joys
INGREDIENTS
1.5C unsweetened shredded coconut
2 Tbs extra virgin coconut oil
2-3 Tbs raw unfiltered honey
2 scoops collagen peptides (optional - I used @vitalproteins)
1 dark chocolate bar (I used @eatingevolved)
1 Tbs extra virgin coconut oil
Almonds
Sea salt
Hemp seeds (optional - I used @bobsredmill)
DIRECTIONS
Place unsweetened shredded coconut flakes in the food processor with coconut oil and 2 Tbs honey. Blend into a paste, if it doesn’t stick together add one more tablespoon of honey.
Mold mixture into patties and place onto parchment paper. Place in freezer for 10 to 15 minutes to solidify.
Once patties are ready, melt one chocolate bar and 1 tablespoon of coconut oil in a microwave safe bowl. Microwave for 30 seconds, then stir, microwave for 30 seconds again. Do this until chocolate is completely melted.
Using two forks, place each patty in melted chocolate and covered completely. Let excess chocolate drip off in the bowl before placing back on the parchment paper.
Top each patty with one almond, hemp seeds (optional) and sea salt. Place patties back in freezer for 10 minutes to harden.
Store in fridge or freezer
