Momma's Vegan Lebanese Tabouli & Lentils

INGREDIENTS

  • 4C finely chopped parsley

  • 3 medium tomatoes, finely chopped

  • 1 finely chopped white onion

  • 1 Tbs dried mint

  • 1/2C cooked lentils

  • Juice of 1 lemon

  • 1/4C extra virgin olive oil

  • Salt and pepper to taste

DIRECTIONS

  1. Mix all ingredients together in bowl.

  2. Chill in the fridge and serve cold.
