Turkey Chili with Cauliflower Rice

TURKEY CHILI WITH CAULIFLOWER RICE

Soup season is the best season because my crock pot does all the work! Turkey chili is a personal fall favorite for me. I altered my typical recipe to include more vegetables and healing ingredients for higher health benefits.

I included turmeric because it has powerful anti-inflammatory effects and is a very strong antioxidant. I also used bone broth instead of regular broth to boost immune function, maintain a healthy gut and utilize as a source of collagen. Mixed with all these veggies, I’d say this is a super-soup!

Ingredients (all available at Trader Joe’s):

  • 2 lbs of ground turkey breast (99% lean, 1% fat)

  • 2 boxes of chicken bone broth (about 4 cups)

  • 1 28oz can organic crushed tomatoes

  • 2 cans organic black beans (drained and rinsed)

  • 1 bag of riced cauliflower (about 2 cups)

  • 1 red bell pepper

  • 1-2 large celery ribs

  • 1 yellow onion

  • 1 large carrot

  • 3 garlic cloves

  • 1 lime

  • 2 Tbs freshly chopped cilantro

  • 1 tbsp chipotle pepper in adobo sauce, chopped (optional for spice)

  • 1.5 Tbs organic taco seasoning

  • .5 Tbs turmeric

  • 1 Tbs chili powder

  • 2 Tbs cumin

  • Black pepper

  • Olive oil or avocado oil

Toppings:

  • Greek yogurt (sour cream replacement)

  • Fresh cilantro

Kitchen Needs:

  • Crockpot

  • Large pan

  • Spatula

  • Cutting board

  • Knife

Directions:

  1. Lightly coat large skillet with oil and place over high heat on the stove. Add turkey breast and cook until golden brown, breaking apart into small pieces with the spatula (7-8 minutes).

  2. Add cooked turkey breast to crockpot with crushed tomatoes, bone broth, riced cauliflower and black beans. Turn to low heat.

  3. Chop all vegetables (celery, carrot, red bell pepper, onion, garlic) and add to crock pot. Chop lime into four pieces, squeezing juice into the chili and add remaining lime pieces to the crockpot.

  4. Add all seasonings (chipotle pepper, taco seasoning, chili powder, turmeric, cumin, cilantro) to the crock pot and stir well.

  5. Let chili cook on low for 3-4 hours, until vegetables are soft.
