Vegan Chocolate-Covered Salted Caramel Bites

INGREDIENTS

7-10 organic medjool dates
Organic cashew butter (I used @justins)
Dark chocolate bar (I used @eatingevolved
1 tsp extra virgin coconut oil (I used @nutiva
Sea salt (I used @maldonsalt
Hemp seeds (I used @bobsredmill

DIRECTIONS

  1. Using a knife, create an insertion long ways across the date, not poking through the other side. Remove the pit and open like a taco.

  2. Fill the center of the date with cashew butter using small spoon.

  3. Place on a plate and freeze for 10-15 mins to solidify. 

  4. Once they’re ready, break and melt 1 dark chocolate bar in microwave with 1 tsp coconut oil. (30 sec. / stir / repeat until fully melted)

  5. Remove cashew butter filled dates from freezer and cover top with melted chocolate.

  6. Add flakey sea salt and hemp seeds on top. 

  7. Place in freezer for 20-30 mins until chocolate is hard. Keep in freezer and eat cold.
