Chocolate Pumpkin Fudge

INGREDIENTS

  • 2 cups organic creamy nut butter (I used peanut butter)

  • 1/2 cup organic pumpkin purée

  • 1/4 cup organic maple syrup

  • 1/2 cup + 1 TBS virgin coconut oil *seperated

  • 1 tsp organic vanilla extract

  • 1 tsp cinnamon

  • 1 tsp pumpkin pie spice *optional

  • 2 TBS flax seed meal

  • 2 TBS hemp seeds

  • 1 dark chocolate bar (I used @eatingevolved 72% but @traderjoes has one as well)

  • 2 scoops @vitalproteins collagen peptides *optional

DIRECTIONS

  1. Melt 1/2 cup coconut oil and 2 cups nut butter in large bowl and mix thoroughly.

  2. Add pumpkin purée, hemp seeds, flax seed meal, vanilla, spices, maple syrup and collagen (if using) and mix to a smooth texture. 

  3. Line 8X8 baking dish with parchment paper and pour in mixture.

  4. Freeze pumpkin fudge for 30 minutes or until firm. 

  5. Remove fudge from freezer and cut into bars.

  6. Melt chocolate bar and 1 tbs coconut oil for about 30 seconds in microwave.

  7. Using two forks, place pumpkin fudge in bowl of melted chocolate and cover thoroughly one by one. Place on cookie sheet to dry.

  8. Freeze for an additional 20 minutes for chocolate to harden and enjoy!
