Raw Cookie Dough Bites

Anyone else love eating raw cookie dough? Yeah, me too. It’s one of my favorite things in the whole wide world. Would you believe me if I told you I just made it healthy? You should!

Loaded with healthy fats, nuts, collagen, flax and hemp, these “Raw Cookie Dough Bites” are the perfect way to fix your sweet tooth without the guilt. I think this may be my favorite recipe so far… No joke, they’re so delicious you’ll think its the real deal.

ingredients

  • 1 cup oat flour (blend oats on high in blender until it becomes a flour)

  • 1/3 cup raw cashews

  • 1/3 cup organic almond butter

  • 2-3 Tbs maple syrup or honey

  • 1 tsp vanilla extract

  • 2 Tbs flax meal

  • 2 Tbs hemp seeds

  • Sprinkle of sea salt

  • 1 Tbs milk alternative (I used my homemade oat milk)

  • 2 scoops collagen peptides (optional - I used Vital Proteins)

  • Mini dark chocolate chips (I used Enjoy Life Foods from Target)


Directions

  1. Add oat flour and raw cashews to food processor. Blend until paste forms.

  2. Add in almond butter, maple syrup or honey, vanilla extract, flax meal, hemp seeds, nut or oat milk, sea salt and collagen (if using). Blend until all ingredients mix into dough.

  3. Transfer dough from food processor into mixing bowl.

  4. Using baking spatula, fold in dark chocolate chips and mix into dough thoroughly.

  5. Using 1” ice cream scooper, scoop dough into balls and mold between hands. Transfer to a baking sheet with parchment paper and put in freezer for 10-15 mins to solidify.
