Turmeric Mediterranean Cauliflower Rice

It's no secret I absolutely love Mediterranean Food. I try to incorporate turmeric into almost all of my dishes because of its light flavor and anti-inflammatory properties that fight the body's foreign invaders to repair damage.

The cauliflower rice substitute makes for a low-carb, detoxifying side to any dish, especially my Greek Chicken Kabobs.

Ingredients: 

  • 2 cups riced cauliflower (I used Veggie Noodle Co. pre-riced from Sprouts)

  • 1 large red bell pepper

  • ½ yellow onion

  • ½ cup fresh Mediterranean parsley

  • 4 cloves garlic, minced

  • Freshly ground black pepper

  • 1 TBS fresh lemon juice

  • ½ tsp turmeric

  • ½ tsp cumin

  • Olive oil

Toppings:

  • Fat free feta crumbles (exclude for Vegan)

  • Kalamata olives

  • Lemon slices

Directions:

  1. Sautee cauliflower rice with 1 TBS olive oil on medium heat on skillet, stirring frequently.

  2. While cauliflower rice cooks, cut red bell pepper into small enough pieces to fit into food processor (2 in. X 2 in.). Chop bell pepper in food processor until pieces are riced but not pulped. Add to skillet. Repeat the same process with ½ yellow onion.

  3. Add minced garlic, black pepper, turmeric and cumin to skillet. Cook for 2-3 minutes, stirring frequently.

  4. Remove skillet from heat. Add chopped parsley and lemon juice, mixing together.

  5. Garnish with Kalamata olives, fat free feta crumbles and lemon slices as desired.
