Turmeric Mediterranean Cauliflower Rice
turmeric mediterranean cauliflower rice
It's no secret I absolutely love Mediterranean Food. I try to incorporate turmeric into almost all of my dishes because of its light flavor and anti-inflammatory properties that fight the body's foreign invaders to repair damage.
The cauliflower rice substitute makes for a low-carb, detoxifying side to any dish, especially my Greek Chicken Kabobs.
Ingredients:
2 cups riced cauliflower (I used Veggie Noodle Co. pre-riced from Sprouts)
1 large red bell pepper
½ yellow onion
½ cup fresh Mediterranean parsley
4 cloves garlic, minced
Freshly ground black pepper
1 TBS fresh lemon juice
½ tsp turmeric
½ tsp cumin
Olive oil
Toppings:
Fat free feta crumbles (exclude for Vegan)
Kalamata olives
Lemon slices
Directions:
Sautee cauliflower rice with 1 TBS olive oil on medium heat on skillet, stirring frequently.
While cauliflower rice cooks, cut red bell pepper into small enough pieces to fit into food processor (2 in. X 2 in.). Chop bell pepper in food processor until pieces are riced but not pulped. Add to skillet. Repeat the same process with ½ yellow onion.
Add minced garlic, black pepper, turmeric and cumin to skillet. Cook for 2-3 minutes, stirring frequently.
Remove skillet from heat. Add chopped parsley and lemon juice, mixing together.
Garnish with Kalamata olives, fat free feta crumbles and lemon slices as desired.
