Matcha Morning Pancakes

I am a firm believer that every morning should start with matcha. While I love coffee, it sometimes induces my anxiety because of the caffeine.
Matcha supplies me with calm and focused energy that allows me to slowly transition from morning to day. These "Matcha Morning" pancakes are high in protein, supply plenty of energy and are absolutely delicious.
Ingredients:
1 cup Kodiak Cakes Buttermilk mix
1 scoop collagen peptides *optional
Dash of cinnamon
1/2 Tbs matcha powder
1 Tbs organic chia seeds
3/4 cup cashew milk
Toppings:
Organic Almond Butter
Hemp seeds - shelled
Coconut flakes (unsweetened)
Organic reduced sugar maple syrup
Directions:
Mix Kodiak Cakes, collagen peptides, cinnamon, chia seeds, matcha powder in bowl. Add cashew milk and slowly mix in.
Turn stove on medium to low heat and spray pan with coconut oil. Add half of mix to pan and cook 2-3 minutes on each side, checking to not burn.
Serve on plate with toppings of choice. I used almond butter, hemp seeds, unsweetened coconut flakes and organic reduced sugar maple syrup.
