GF & DF Superfood Banana Bread
INGREDIENTS:
1 1/2 cup ripe bananas (2 bananas mashed)
2 organic eggs
Sweetener: 1/4 or 1/3 cup maple syrup or honey, or 3-4 Tbs coconut sugar
(I used maple syrup. Amount can be more or less depending on how sweet you want it)
1/2 cup apple sauce
1/2 Tbs vanilla extract
2 cups oat flour
(blend oats in high-speed blender or food processor until fine flour forms. 1 cup oats makes 3/4 cup oat flour)Superfood additions: 2 Tbs flax meal, 2 Tbs hemp seeds, 1 Tbs chia
(all optional but highly encouraged!)2 tsp cinnamon
1/2 tsp sea salt or pink salt
1 3/4 tsp baking powder
1/4-1/3 cup dairy-free chocolate chips (I used Enjoy Life Foods)
Optional: 3-4 scoops Vital Proteins Collagen, Unsweetened Coconut Shreds
DIRECTIONS
Preheat oven to 350 degrees.
In large mixing bowl, whisk two eggs.
Add in ripe bananas and mash.
Add in remaining ingredients except oat flour (vanilla extract, superfood additions, cinnamon, salt, baking powder, sweetener, collagen if using) and mix well.
Gradually mix in oat flour so it doesn’t clump. Add in chocolate chips and mix.
Spray 9X5 bread pan with oil (I love Trader Joe’s coconut oil spray for cooking) and pour in mixture.
Add toppings of choice: additional chocolate chips, coconut shreds, more hemp seeds or even thin sliced bananas if you have extra!
Bake for 40 minutes, watching closely. To check if it is ready, use the toothpick test in the center of the loaf. If it comes out with batter still on it, you may need some extra time. If it comes out clean, it’s good to go!
