What do you get when you combine a fall scone and cookie? Pumpkin Scookies.
INGREDIENTS
1 3/4 cup almond flour (@bobsredmill)
2 Tbs flax meal
2 Tbs hemp seeds
1 cup organic pumpkin (@thrivemarket)
1 egg (@vitalfarms)
1/4 cup + 1 tbs maple syrup or honey (@naturenates)
1/4 cup coconut oil (@nutiva)
1/3 cup almond or cashew butter
1/4 tsp baking soda
Dash of cinnamon
1 tsp pumpkin pie spice
Dash of sea salt
Optional: 3-4 scoops collagen peptides
Toppings: oats, chocolate chips or pumpkin seeds
DIRECTIONS
Preheat oven to 325
Mix all ingredients (excluding toppings) in mixing bowl (wet ingredients first, then add dry). If the dough is slightly running, add tbs by tbs of flour until you reach a fluffy dough consistency.
Using a large ice cream scooper (2 in.) or spoon, create cookies and place on baking sheet (oiled or covered in parchment paper). Flatten the cookies if you want them flatter or keep them pillow-y like I did!
Top cookies with toppings
Bake 30-35 minutes, watching closely. Enjoy!
