Protein-Packed Brownies
My absolute favorite part about health and fitness is that we truly don't have to give up the foods we love to eat clean. When making any sort of baked good, I always try to incorporate a protein source (typically Kodiak Cakes or Quest Protein) so that I know I am not eating crap. I include sneaky ingredients like collagen peptides, flax meal and hemp seeds for nutrient-dense desserts that I can eat at any hour of the day. These protein brownies are delicious and took no time to cook! Without any refined sugar, they're so clean you can eat them for breakfast.
Ingredients:
- 2 cups Kodiak Cakes All-Purpose Baking Mix or Buttermilk Pancake Mix
- 2 TBS flax meal
- 2 TBS hemp seeds
- 2 scoops Vital Proteins collagen peptides (optional)
- 3 TBS cacao powder
- 1 cup unsweetened vanilla or chocolate almond milk
- 3 TBS honey or maple syrup
- 1 egg
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 2 TBS melted coconut butter (optional)
Toppings:
- Unsweetened coconut flakes
- 1/3 bar of dark chocolate, chopped (I used Madecasse 92% Cacao)
- Cacao nibs (optional)
Directions:
- Preheat oven to 325 degrees
- Mix all wet ingredients in bowl (almond milk, honey or maple syrup, egg, melted coconut oil, vanilla extract, and coconut butter if using). Mix thoroughly.
- Add in dry ingredients one by one and gradually mix in (Kodiak Cakes mix, flax meal, hemp seeds, cacao powder and collagen peptides if using). Mix thoroughly.
- Spray 10 X 10 pan with coconut oil or baking spray. Add brownie mixture in and spread across pan.
- Top with coconut shreds, chocolate and cacao nibs.
- Bake for 15-18 minutes. To check if they are ready, stick toothpick in the middle. If it comes out clean, they are done. If batter residue is on the stick, give it a couple more minutes.
- Top with nut butter if you'd like!
