Gluten & Dairy Free PB Chocolate Cookies

INGREDIENTS

*** makes 6-8 cookies ***
1 egg (I used @vitalfarms)
1 tsp vanilla extract 
1.5 Tbs melted ghee or grassfed butter (@vitalfarms)
1/3C organic PB (@justins)
3-4 Tbs organic honey (@naturenates)
1 1/4C almond flour (@bobsredmill)
2 Tbs nut milk (@foragerproject)
1/2 tsp baking powder
Dark chocolate chips (@enjoylifefoods)
Sprinkle sea salt 
Optional: @vitalproteins collagen peptides, 2 Tbs hemp seeds, 2 Tbs flax meal

DIRECTIONS

  1. Preheat oven to 350

  2. Whisk egg in large mixing bowl. Add melted butter/ghee (not too hot or it will cook the egg), vanilla extract, milk, honey and peanut butter. Mix well. 

  3. Add in dry ingredients: baking powder, almond flour (mix in gradually to avoid clumping), and collagen, hemp and flax if using. 

  4. Once dough is mixed, fold in dark choc chips (about 1/3C)

  5. Spray baking sheet with coconut oil and place balls of cookie dough (I made about 7 large cookies). Top with sea salt. 

  6. Bake at 350 for 15 mins.
