The Most Amazing GF Chia Blueberry Crumble Bars You'll Ever Have.

CRUMBLE

  • 3 cups almond flour

  • 1 cup rolled oats

  • 3 Tbs almond milk or milk alternative

  • 1/4 cup + 1 Tbs coconut oil

  • 1/4 cup organic unfiltered honey or maple syrup

  • 1 tsp vanilla extract

  • dash of cinnamon

  • sprinkle of sea salt or Himalayan salt

  • Optional: 3-4 scoops collagen peptides, 2 Tbs flax meal or hemp seeds

  • Optional toppings: unsweetened coconut shreds, pumpkin seeds or hemp seeds

FILLING

  • 2 cups organic blueberries (or other berry of choice)

  • 1/2 cup filtered water

  • 2 tbs almond flour

  • 1/4 cup organic unfiltered honey

  • 1 lemon, juiced

  • 5 tsp chia seeds

  • sprinkle of sea salt or Himalayan salt

  • Optional: 2-3 scoops collagen peptides

DIRECTIONS:

  1. Preheat oven to 350 degrees

  2. Mix all crumble ingredients together in a large mixing bowl

  3. Spray a 9X9 baking dish with coconut oil (or line with parchment paper) and put 2/3 of the mixture in the bottom to create crust. Flatten down and set remaining 1/3 aside for crumble.

  4. Bake crust for 10 minutes then remove and set aside.

  5. While the crust bakes, combine all filling ingredients into a sauce pan and cook over medium high heat, stirring frequently and smashing the berries.

  6. Once the filling ingredients have come to a boil, turn the heat to low and allow it to cook for 10 more minutes, stirring and smashing berries. The chia seeds will expand to make a more gelatin-like texture.

  7. Once the crust is baked and the filling is ready, pour the filling on top of the crust.

  8. Crumble remaining 1/3 of the crumble mixture with your fingers across the top of the dish. Add toppings here if you’d like!

  9. Bake for an additional 10 minutes in the oven at 350.

  10. Let the pan cool and bars solidify in the fridge for 20 minutes. Enjoy & store in the fridge!
