Greek Yogurt Chicken Kebabs
GREEK YOGURT CHICKEN KABOBS
These grilled Greek Yogurt Chicken Kebabs are perfect for a dinner party or a full week's meal prep, with simple and satisfying ingredients packed with flavor.
• 2 organic chicken breasts
• 1 cup plain Greek yogurt
• ½ large red onion
• 1 large red bell pepper
• 1 medium lemon
• ¼ bunch fresh chopped parsley
• 2 TBS fresh chopped oregano
• ½ tsp cumin
• ½ TBS onion powder
• Freshly cracked pepper
1. Turn on the grill to medium/high heat.
2. Combine greek yogurt, juice of medium lemon, parsley, oregano, cumin, onion powder and cracked pepper into large mixing bowl. Use fork to combine ingredients into marinade.
3. Chop red bell pepper and red onion into 1 in. X 1 in. pieces. Set aside in separate bowl.
4. Rinse chicken and cut into 1 in. X 1 in. cubes. Place in bowl with marinade and ensure all pieces are thoroughly covered. Let chicken marinade for 10 minutes in bowl.
5. With skewers, alternate placing chicken, bell pepper and onion to form the kebab and place on plate to bring to grill. Cover kebabs in leftover yogurt marinade.
6. Place kebabs on heated grill. Allow chicken to cook for 10-15 minutes, rotating kebabs every 2-3 minutes.
7. Serve with my Turmeric Cauliflower rice.
